Salmon Butterflies for One
(Serves 1, 450 calories)
70 g dry farfalle/butterfly pasta
4 tbsp light soft cheese
Squeeze lemon juice
50 g smoked salmon, chopped
Bunch of chives, snipped
Salt and pepper to taste
- Cook pasta by following the instructions on the packet. Take off the heat, drain but leave a little bit of the water.
- Place the casserole back on the hob, turning the heat down to low. Stir in the cream cheese, lemon juice, salmon, a little bit of salt and pepper to taste.
- Add most of the chives and use the remaining chives for garnish (I forgot to add the chives! Chives make food better, for sure!)
If you're making it for more than one, just make the dish x amount of people. Simple!
