HAPPY PANCAKE DAY!
I have been waiting for this day for over a week now! Due to having gotten my sweet kick sorted out the other day with the jam and cream buns, I thought I would make a savoury pancake tonight.
My grandmother used to make the best ever bacon pancakes! Probably due to the lethal amount of butter and the generous amount of bacon, oh they were tasty!
Anywho, here's a very simple and most convenient recipe that makes four pancakes in a small frying pan - no more, and no less! Add a few more bacon rashers if this didn't happen to be your second dinner... Who? Me? Two dinners? Do you take me for come kind of Hobbit or something?! *cough cough*
Fleskepannekaker - Bacon Pancakes
(Makes 4 pancakes - Serves 2, about 550 calories each)
100 g flour (I used 50 g wholemeal and 50 g plain)
250 ml skimmed milk
2 eggs
1-1 1/2 tbsp melted butter (flora light perhaps?)
1/2 tsp salt
4-5 bacon rashers, trimmed and chopped
Fresh chives, snipped
- Mix together flour, milk, egg, butter and salt in a bowl and leave to "rest" for at least 15 minutes.
- Fry the bacon, and set aside. You wont need butter or oil,
- In the same pan, add a little butter and pour a ladleful of the pancake mixture, scatter over some bacon and snipped chives. Fry until it's got a nice light golden colour, and flip over. You should get about 4 medium pancaked out of this mix.
