Pork with Fragrant Bean Mash

Quick, simple and satisfying!
I made this the other day and was pleasantly surprised at how nice the mash turned out! Using beans instead of potatoes can be a nice difference from time to time, and it only takes about 5 minutes to cook!

Pork with Fragrant Bean Mash
(Serves 2, about 450 caloires each)

260 g pork steaks, trimmed of fat (2 steaks)
1 tbsp oil
1 small red onion, chopped
2 garlic cloves, finely chopped
400g haricot beans (2 medium tins)
250 ml vegetable stock
2 tbsp ground coriander
Salt & pepper to taste

- Pre-heat the grill, medium heat.

- Season the steaks with salt and pepper on each side, and place on the grill for 12-15 minutes. Turn halfway through, and turn the heat up a notch for the last few minutes.

- Heat the oil in a medium sized pot, and add the onion and garlic. Soften for a few minutes before adding the stock, beans, and coriander. Let it simmer for about five minutes. Season to taste and roughly mash.
I used a little too much water, so I drained off quite a bit of it before mashing.

- Serve the mash with a pork steak, and a few fresh coriander leaves as a finishing touch!
